Fès est l'une des rares cités impériales médiévales du monde islamique dont les monuments demeurent en usage. La médersa Bou Inania (1350-1357), commandée par le sultan mérinide Abou Inan Faris, est la seule médersa de Fès encore utilisée comme mosquée du vendredi. La mosquée-université al-Qaraouiyine, fondée en 859 par Fatima al-Fihri, abrite la plus ancienne bibliothèque universitaire au monde, restaurée et rouverte au public en 2016. La tannerie Chouara, dans Fès el-Bali, produit du cuir avec les mêmes fosses de teinture depuis le XIᵉ siècle.
